A rich, creamy Louisiana-style soup packed with smoked sausage, vegetables, and plenty of Cajun flavor.

Ingredients
- 1 lb. fresh green onion sausage
- 1 lb. smoked sausage, sliced
- 2 onions, chopped
- 1 bell pepper, chopped
- 2 stalks celery, chopped
- 1 can (10 oz.) fire-roasted Rotel
- 1 can (8 oz.) tomato sauce
- 1 small can tomato paste
- 1 can cream of mushroom soup or 1 (8 oz.) package cream cheese
- 48 oz. chicken broth
- 1 head cabbage, chopped
- 2–3 cloves garlic, minced
- LeMoine’s Cajun Seasoning
- 2 squirts hot sauce, or to taste
- A few dashes Worcestershire sauce
- A generous amount of green onions, chopped
- Fresh parsley, chopped
- 1 pint heavy cream
Directions
- Brown the Sausage. In a large stockpot, brown the green onion sausage and sliced Pepper Jack smoked sausage over medium heat. Allow the sausage to develop a little color for extra flavor.
- Sauté the Vegetables. Add the chopped onions, bell pepper, celery, and minced garlic. Cook until the vegetables begin to soften.
- Build the Soup. Stir in the fire-roasted Rotel, tomato sauce, tomato paste, cream of mushroom soup or cream cheese, chicken broth, hot sauce, and Worcestershire sauce. Mix well.
- Add the Cabbage & Herbs. Add the chopped cabbage, green onions, and parsley. Bring the soup to a boil.
- Simmer. Reduce the heat and simmer for approximately 1 hour, stirring occasionally. For firmer cabbage, add the cabbage during the last 15 minutes of cooking so it retains more texture and doesn’t become too soft.
- Make It Creamy. Stir in the 1 pint of heavy cream during the final few minutes of cooking. Heat through, but do not let the soup boil vigorously after adding the cream.
- Taste & Serve. Taste and adjust the hot sauce, Worcestershire, and seasoningsto your liking. Serve hot with crusty French bread, cornbread, or crackers.

For an extra Louisiana kick, add your favorite Cajun seasoning to taste. The sausage, hot sauce, and fire-roasted Rotel already bring plenty of flavor, so season gradually and taste as you go.
